What must-eat foods does Taiwan have?
Taiwan's essential dishes: beef noodle soup (beef tendon + rich broth), xiaolongbao at Din Tai Fung, oyster vermicelli, scallion pancake (cong you bing), pineapple cake, bubble tea (it was invented here), stinky tofu, and the iconic lu rou fan (braised pork rice). Night markets are the best place to sample everything.
Which night market in Taipei is best?
Shilin is biggest and most famous — arrive hungry, leave overwhelmed. Raohe is more manageable (one long street) and great for photos. Ningxia is locals' favourite and focuses on classic Taiwanese snacks. For your first visit, combine Raohe (dinner) + Ningxia (desserts) on the same evening.
How is Tainan better than Taipei for food?
Tainan's food culture is older, cheaper, and more rooted in tradition. Century-old recipes that disappeared from Taipei (too fast-paced, too commercial) are still served from the same shops in Tainan. The city's smaller size also means you walk between food stops rather than taking the MRT.
Should I book Michelin restaurants in Taipei in advance?
For starred restaurants (RAW, Taïrroir, Le Palais), book 2–4 weeks ahead online — they fill fast. Din Tai Fung flagship (Xinyi Anhe branch) has queues but moves quickly; arrive by 11am or 5pm. Bib Gourmand spots (Night Market Ah-Chung, Lan Jia) are walk-in only.
Where should a food-focused traveller stay in Taipei?
Ximending or Zhongshan area gives you instant access to night markets, traditional breakfast shops, and the city's best noodle alleys. Main Station area is also good — centrally connected to food neighbourhoods across the city by MRT. Avoid staying in Xinyi if food is your priority (more upscale dining, less street food).
